Mastering the temperature of your Kokko
Achieve a low temperature
Equipment
- Charcoal
- 1 firelighter
Time
10 to 15 min
Step 1
Light your Kokko with a single fire starter and keep the lid open for 10 to 15 minutes, with the bottom vent fully open. The coals should glow red, but there should be no flames.
Step 2
Close the lid of the Kokko, leave a small opening in the lower vent, and open the chimney at the top just slightly. This will create a stable temperature of around 100 °C.
Reach a standard temperature
Equipment
- Charcoal
- 2 firelighters
Time
15-20 min
Step 1
Light the Kokko using 2 firelighters and keep the lid open for about 15 to 20 minutes with the bottom vent fully open. The coals will glow red and small flames will appear.
Step 2
Close the Kokko lid and open the top vent to reach 150°C. Once the desired temperature is reached, close two-thirds of the bottom vent and two-thirds of the top vent to maintain a stable temperature.
Reach high temperatures
Equipment
- Charcoal
- 3 firelighters
Time
20-30 min
Step 1
Light the Kokko using 3 firelighters and keep the lid open for about 20 to 30 minutes with the bottom vent fully open. The coals will be glowing and large flames will appear.
Step 2
Close the lid of the Kokko and leave both the bottom vent and the top chimney fully open. Once the desired temperature is reached, half-close the bottom vent and the top chimney.
Tips
If the temperature rises or falls too much, you can open or close the top vent.
If you open the vent wider, the temperature will rise.
If you close the vent further, the temperature will drop.
If your Kokko isn’t cooling down, close both the bottom and top vents to smother the fire and lower the temperature.
Good to know: Wind and outdoor temperature can affect the heat inside your kamado.
