The Classic Crêpe Batter Recipe
The secret to perfect crêpes lies in the batter. Here’s our homemade recipe.
Serves 4 – about 15 to 20 crêpes depending on thickness:
- 250 g plain flour
- 4 eggs
- 1/2 litre milk
- 1 packet vanilla sugar * 50g melted butter
- 1 pinch of salt
- To taste: a tablespoon of rum or orange blossom water
How to make lump-free crêpes:
- Before you start, melt the butter and warm the milk until just lukewarm.
- Place the flour, salt, and vanilla sugar in a mixing bowl.
- Mix gently. When the mixture starts to come together, add the melted butter while stirring.
- Gradually add the milk, stirring continuously, then add the rum and/or orange blossom water.
- Let the batter rest for at least 30 minutes at room temperature before cooking your crêpes.

The Right Tools for Cooking Crêpes on the Barbecue
At first glance, making crêpes on a barbecue might seem surprising. But with the right accessory, anything is possible. To cook crêpes on your Kokko, all you need is the right equipment and to choose the cast iron skillet. Its ability to concentrate and evenly distribute heat means your crêpes will cook quickly. Thanks to its (removable) handle, you can even practice flipping them! Beyond crêpes, the cast iron skillet is perfect for gentle simmering, sauces, and achieving irresistibly tender, juicy dishes.
Cooking Crêpes on the Kokko
While your Kokko is heating up, melt about 20g of butter to lightly grease your skillet between each crêpe, preventing them from sticking. At Kokko, we have a tip to avoid burns: cut a small potato in half, stick it on a barbecue fork—with a long handle!—then dip the cut side in butter to safely brush the skillet. And don’t forget to wear gloves, as you’ll be handling the skillet handle several times—never touch it with bare hands.
For cooking, place your grill at its highest setting and heat the skillet on top. Once hot, grease it and pour in a ladleful of batter. Let it cook for 1 to 2 minutes, depending on thickness, before flipping—using the handle or a spatula (which is safer)—and let it brown for another 1 to 2 minutes before removing from the heat.
