Ingredients
2 flat peaches
2 apricots
50 g sugar
Method:
1. Prepare a peach sorbet. Visit the author’s blog for the detailed sorbet recipe.
2. Slice your peaches in half horizontally. Cut one of the halves into 4 pieces. Quarter your apricots as well and thread them onto skewers with the peach pieces.
3. Grill your peach halves and skewers for one minute on each side.
4. Caramelise the sugar on your plancha and roll the fruit in it as the sugar starts to set, to caramelise the skewers and peach halves, then serve….
