New year, new decade—and in the kitchen, renewal is in the air too. After a month of detox, it’s time to catch up on the culinary trends that will define 2020.
1 - Declaring war on food waste and reducing waste.
Say goodbye to family-size packs and over-packaged products. To avoid throwing away expired food, shop more often and only buy what you’ll eat in the next few days. Buy your fruits and vegetables at the market or through short supply chains to avoid supermarket bags and trays, and for your tea, cereals, pasta, biscuits, nuts, etc., choose bulk.

2 - Drinking more and more... without alcohol!
Did you take on the Dry January challenge? Why not keep it going? Drinking less is the trend for 2020. Bars and restaurants are joining in, offering more and more alcohol-free cocktails on their menus. Now, when you’re out, “sober is the new cool.”

3 - The vegan boom.
More respectful of the environment and animal welfare, and better for your health, it’s now more popular than ever. With so many plant-based alternatives available, it’s easy to be tempted.

4 - Turning away from meat.
Not quite ready to go 100% plant-based? Cut your steak in half and in 2020, become a flexitarian. In other words, eat meat less often, but choose quality. That’s perfect, because smoked, roasted, or grilled, seafood, fish, fruits, and vegetables are also delicious on the kamado.

5 - A richer diet.
It’s not about eating fattier foods, but about choosing products made with wholegrain flours, which are richer in fiber, vitamins, and minerals, unlike refined “white” flours where the grain’s nutrient-rich outer layer has been removed. Think about varying your grains and legumes too: quinoa, rye, spelt, rice, buckwheat, corn, lupin, lentils, chickpeas…

6 - Goodbye to grazing dinners, hello to one-pot meals.
Homemade cooking is on the rise, and more and more of us are getting— or at least trying to get—into the kitchen. In 2020, we’re keeping it simple by serving our guests a single, standout dish.

7 - Rediscover traditional recipes.
Regional cooking, family traditions, and culinary secrets passed down through generations are what make our mouths water this year. We’re going back to our roots and reinventing the recipes of our parents and grandparents. But with the ecological emergency in mind, we’re giving classics like shepherd’s pie or lasagna a twist by replacing meat with plant-based proteins.

8 - Explore Japanese cuisine.
To get into the spirit of the upcoming Olympics taking place in Tokyo in summer 2020, grab your chopsticks and enjoy dishes from this rich, varied, and healthy cuisine. Treat yourself to bentos, ramen, gyozas, or yakitori—all easy to make at home.

9 - Choose local and seasonal products.
Visit local producers, AMAPs, food co-ops, and other short supply chain shops to buy seasonal foods grown close to home. Discover the list of seasonal winter produce.

Happy New Year to all, and above all, bon appétit!
