Gathering around the Kokko: Meet Yann, 32, currently living in Saint Gervais les Bains (74), at the foot of Mont Blanc. "Passionate about cooking, I love spending time in the kitchen! I’ve had the chance to live in several countries and discover different culinary cultures before moving back to France (Australia, Estonia, Belgium)."

You’ve recently become the proud owner of a Kokko. Why did you choose a Kamado?

I bought my Kokko last spring. I’d been looking into multifunctional barbecues for a while. I came across kamados, and a bit later, the Kokko brand... After a few months of use, what stands out—and what I love most about a kamado—is being able to cook a wide variety of complete meals on the same grill.

What’s your signature dish?

I don’t really have one... If I had to pick a quick and satisfying dish I enjoy making: hanger steak with a pepper crust. To make the most of the embers and prepare a simple side, I cook a sweet potato and an unpeeled eggplant, pierced and placed directly on the grill, before the meat. A fresh tzatziki-style sauce, and you’re all set. SIMPLE, VERY QUICK, EFFECTIVE.

Any tips or tricks to share with fellow Kokko Lovers?

Always fill your Kamado the same way, whether you’re slow-cooking at low temperature or grilling. By doing this, you’ll get to “know” your Kokko, learn to better control the heat, and manage the temperature according to what you want to cook.

Do you use it often?

As often as possible—alone, with family, or with friends... I’m already looking forward to next autumn and winter for cold smoking (coppa, pancetta, cured ham, other smoked cuts, fish, ...)
