
At Kokko, we celebrate spring around the fire, with a beautiful cut of lamb on the kamado, seasonal vegetables, and plenty of good cheer in the air. Did you know the tradition of the Easter egg dates back to Antiquity? For Persians and Egyptians, the egg already symbolized rebirth and life. So today, between chocolate, BBQ, and shared moments, we keep the spirit alive… in our own way!
🛒 Ingredients (serves 4 to 6)
For the lamb shoulder
1 bone-in lamb shoulder (1.5 to 2 kg)
4 garlic cloves
1 tbsp honey
2 tbsp mustard
2 tbsp olive oil
1 sprig rosemary
Salt, pepper
For the roasted vegetables
4 carrots
1 bunch of turnips
500 g baby potatoes
Olive oil, thyme, salt
For the yogurt sauce
1 plain Greek yogurt
Juice of 1/2 lemon
1 small garlic clove
A few fresh mint leaves
Salt, pepper

Set of 4 utensils including a brush for basting your lamb, a spatula, a meat fork, and tongs.
Large Chamba black clay Dutch oven

🔥 Cooking with the Kokko Kamado
1. Prepare the lamb
-Mix the honey, mustard, crushed garlic, olive oil, and rosemary.
-Generously coat the shoulder with this marinade.
-Let it rest at room temperature while you prepare the kamado.
2. Slow cooking on the Kokko
-Light your kamado for indirect cooking, stabilized at 130°C.
-Place the lamb on the grill or in a Dutch oven without the lid.
-Let it slow-cook for 3 to 4 hours, basting occasionally. The meat should fall off the bone easily.
3. Roast the vegetables
-Cut the vegetables into large pieces.
-Season with olive oil, salt, and thyme.
-At the end of the lamb’s cooking time, place the vegetables in the grill basket for 45 minutes to 1 hour.
4. Prepare the fresh sauce
-Mix the yogurt, lemon juice, finely grated garlic, and chopped mint.
-Add salt and pepper, and chill until ready to serve.
🍽 Plating
Shred the shoulder with the pulled pork claws or slice it into generous pieces. Serve with the hot vegetables, a drizzle of yogurt sauce, and a splash of olive oil over everything.
