Red mullet fillets on a bed of mango

Filets de rougets sur lit de mangue


Cooking time: 3 min – Prep time: 15 min – Serves: 4

Ingredients

4 beautiful red mullet fillets
1 ripe mango
1 lime
Chives, coriander, dill
Salt, pepper
Olive oil


Preparation:

1. Peel and dice or slice the mango. Squeeze over the lime juice. Add the chopped herbs, salt, pepper, and a tablespoon of olive oil. Chill in the fridge.

2. Fire up your Kokko and lightly oil the grill. Cook the fillets for 2 minutes skin side down, then 1 minute flesh side down. At the end of cooking, drizzle with a little lime juice.

3. Plating: On a plate, arrange a little mango salad and place a red mullet fillet on top. Garnish with a sprig of coriander (or any herb of your choice).

Tip: You can add tomato and bell pepper to the mango salad.
