Ingredients
1 kg boneless leg of lamb
2 red onions
2 yellow bell peppers
2 crushed garlic cloves
4 tbsp olive oil
1 tsp ground cumin
1 tsp ground ginger
A pinch of chili powder
A few sprigs of fresh mint
1 lemon
Salt, pepper
Preparation:
1. Cut the meat into large cubes. Chop the peppers into pieces and the onions into wedges. Thread onto skewers, alternating pieces of meat, onion, and pepper.
2. Prepare the marinade: mix the olive oil, spices, garlic, chopped mint, lemon juice, and zest.
3. Pour over the skewers and marinate for at least 2 hours, turning them regularly.
4. Preheat the Kokko. Lightly oil the surface and grill the skewers for 10 to 15 minutes.
Tip: Serve with Lebanese tabbouleh.
