Recipe Ingredients
1.5 kg prepared and cleaned octopus
4 lemons
2 spring onions, thinly sliced
2 cloves of garlic, chopped
200 ml wine vinegar
100 ml dry white wine
Olive oil
Oregano
Cayenne pepper
Rosemary
Thyme
Salt, Pepper
Recipe Preparation
1. In a large pot, cover the octopus with olive oil, add the white wine, then the thyme, rosemary, and cayenne pepper. Cover with water. Cook over high heat for 2 hours. The octopus is done when you can easily pierce it with a fork.
2. Meanwhile, in a bowl, mix olive oil with white wine, the juice of 2 lemons, the onions, and garlic. Season to taste with oregano, salt, and pepper. Marinate the octopus in this mixture for at least 1 hour in the refrigerator.
3. Remove the octopus from the marinade and sear it on a hot plancha over high heat for 20 minutes.
4. Serve the grilled octopus with a drizzle of olive oil and lemon juice.
To keep your grilled octopus, store it in olive oil with added lemon juice.
