Ingredients
6 potatoes
7 eggs
3 slices of cooked ham
1 onion
Salt, pepper
Olive oil
Parsley, chives
Butter
Optional: paprika or nutmeg
Preparation:
1. Peel and wash the potatoes. Grate them using a coarse grater.
2. Peel and finely slice the onion, chop the parsley. Mix the potatoes with the onion, parsley, and 1 egg. Season with salt and pepper (and spices if desired).
3. Light your Kokko. Oil it and add a knob of butter. Form 6 small piles of the mixture and flatten them into patties. Cook over high heat for 3 minutes, then let them brown over medium heat for 8 minutes on each side.
4. Meanwhile, fry 6 eggs and cut 6 circles from the cooked ham.
5. Plating: arrange the potato cakes on a plate, then the ham circles, and finally the fried eggs on top. Garnish with chives.
Tip: Serve with a green salad and tomatoes.
