Rabbit with mustard

Lapin moutarde


Cooking time: 45 min – Preparation time: 2:0 h – Serves: 6

Ingredients

For the marinade:

Olive oil
2 cloves of garlic, chopped
2 shallots, finely sliced
Marjoram
Wholegrain mustard
Oregano, thyme, salt and pepper


For the preparation:

1 fine farm rabbit, cut into 6 pieces
100 g smoked country bacon
1 glass of dry white wine
1 clove of garlic
1 onion


Method:

1. Prepare your marinade by mixing all the ingredients. Place the rabbit pieces in the marinade and let them rest for about 2 hours.

2. Preheat your Kokko, then add a little olive oil. Sear the rabbit pieces until golden, then remove and set aside.

3. Add the onions, bacon, and garlic. Deglaze with the white wine to lift the cooking juices. Lower the heat slightly on your Kokko, then return the rabbit pieces to the grill. Baste regularly with the remaining marinade. Let everything cook on the Kokko for about 35 minutes, turning the pieces regularly.

4. Adjust the seasoning with salt and pepper, and serve!
