Flambéed Bananas

Bananes flambées

Cooking time: 5 min – Preparation time: 15 min – Serves: 10

Ingredients

20 bananas (2 per person)
20 cl white rum
100 g butter
300 g caster sugar

Preparation:

1. Prepare the flambé: in a small saucepan, combine the white rum, 10 g of butter, and a teaspoon of sugar. Peel the bananas.

2. On the plancha, over low heat, melt the remaining butter and sugar. As soon as the sugar caramelizes, add the bananas and let them cook for about 2 minutes on each side.

3. You have two options: Either flambé the bananas directly on the plancha, or arrange the bananas on a serving dish, heat the flambé mixture on the plancha until just warm (35°C), then flambé in a saucepan. With a small ladle, pour the flambé mixture from a height into the saucepan several times. Drizzle the bananas and serve immediately.

4. Tips: Use perfectly ripe bananas. Serve with a sorbet for a surprising hot-and-cold effect.
