Ingredients
1 live lobster
For the mayonnaise:
1 egg yolk
1 tbsp mustard
7 tbsp oil
1 lemon
Preparation:
1. Prepare your lobster and cut it in half.
2. Preheat your plancha for 5 minutes, then place the lobster shell side down. The color of the lobster and its flesh will change. 3 minutes before the end of cooking, cut off the lobster claws.
3. Prepare your mayonnaise. Whisk the egg yolk with the mustard and salt. Then gradually add the oil while continuing to whisk. Your mayonnaise will gradually thicken and become firm.
4. Remove the lobster from the Kokko and enjoy!
