Wood chips are designed for hot smoking.
To use them, simply place them on top of the charcoal or in a smoke tube before setting it at the bottom of your kamado. Hot smoking imparts a delicately smoked flavor to your food and is often used for slow cooking at low temperatures.
Good to know: You can soak the chips in water for 30 minutes before use to increase the amount of smoke during cooking.
