How the Kokko XL Works

The Kokko XL exceeds 200°C in under 15 minutes and retains its heat for several hours. Using very little charcoal (compared to a traditional barbecue), it delivers exceptional heat circulation thanks to its ovoid shape, perfect for searing, smoking, or high-temperature cooking. The kamado is renowned for its versatility and durability.

In this new edition of the Kokko, the traditional felt gasket is replaced by a fiberglass seal, delivering improved insulation and enhanced durability. More resistant to heat and humidity, this new seal ensures optimal retention of heat and smoke, for even more precise and flavourful cooking.

Whether you want to sear a rib of beef, grill vegetables or sausages for a warm gathering, smoke a whole fish to enhance its flavor, or roast poultry, it meets all your culinary desires.

Grill

200 to 250°C in 15 minutes
Grilling means cooking food directly over the charcoal, usually at a temperature of 200 to 250°C, which you reach in 15 minutes with 4 large handfuls of charcoal and 3 firelighters. This method is perfect for searing ribeye steaks, grilling skewers, sausages, whole fish, or vegetables.

Roast

180 to 200°C in 12 minutes
Roasting means cooking food with indirect heat, by placing a stone under the grill. To reach 180°C, use 3 handfuls of charcoal and 2 firelighters. This method is perfect for roasting poultry, large cuts of meat like pork shoulder, or gratins.

Cook

280 to 350°C in 20 minutes
Bake like in a traditional oven by using the indirect heat of the Kokko and cooking on a stone. To reach 280°C, use 5 handfuls of charcoal and 3 firelighters. This method is perfect for baking bread, pizzas, tarts, and other similar dishes.

Cold smoking

Cold smoking for 2 to 12 hours
Cold smoking means exposing food to smoke without cooking it, without using charcoal. The outside temperature should be below 15°C. This technique is perfect for salmon, cheese, salt, and cured meats.

Hot smoking

Up to 180°C in 10 minutes
Hot smoking means exposing food to hot smoke using wood chips. To reach a maximum of 180°C, use 2 large handfuls of charcoal and 2 firelighters. This method is perfect for enhancing the smoky flavour of meats, fish, or vegetables.

Belle qualité de fabrication avec que des matériaux sérieux, inox, très beau bois pour les tablettes, etc. Il faut laisser préchauffer plus longtemps qu'un barbecue traditionnel, donc adapter ses habitudes mais le résultat est top. C'est mieux de réhausser les braises pour avoir l'effet grillade, mais une simple grille de barbecue de 35cm suffit à la place du panier Kokko à 99€, carément trop cher ! (J'ai pris une Weber qui a de gros barreaux).
