Ingredients:
18 large king prawns
1 red onion
2 garlic cloves
1 piece of ginger (1 cm)
1/2 bunch of coriander
3 limes
2 tbsp nuoc-mam
2 tbsp olive oil
A pinch of chili
Pepper
Equipment:
Kamado Kokko XL
Set of 4 stainless steel skewers with notch
Large round Chamba black clay dish
Cast iron cooking grate
Preparation:
1. Remove the heads from the king prawns. Thread them onto skewers.
2. Prepare a marinade: mix the finely chopped onion, crushed garlic, grated ginger, chopped coriander, the zest and juice of one of the limes, the oil, nuoc-mam, chili, and pepper. Pour the marinade over the prawns and refrigerate for 2 hours. Cut the remaining limes into wedges.
3. Grill the prawns and limes for about ten minutes on a hot Kokko. Drizzle the prawns with the juice from the grilled limes.
Tip: Serve with a dry, fruity white wine.
