Spring vegetables

Say goodbye to squash and hello to asparagus, carrots, onions, Swiss chard, cucumber, artichoke, celery, turnips, fava beans, lettuce, shallots, garlic, and morels. Until the end of April, you can still enjoy spinach, lamb’s lettuce, cauliflower, and leek. From May, welcome rocket, green beans, courgette, fennel, peas, pink radish, and from June, broccoli, aubergine, and pepper.

Fish to enjoy in spring

Even though they’re available year-round, it’s important to choose fish according to the season to respect breeding periods. Spring is the perfect time to enjoy sea bream, sea bass, red mullet, cod, sardines, turbot, and monkfish.

Spring cheeses

In spring, blooming pastures give milk a richer aroma. Favour young cheeses, such as sheep’s and goat’s cheese. Treat yourself to a Crottin, Selles-sur-Cher, or Rocamadour, for example. Soft-ripened cheeses with a bloomy rind are also a delight: Saint-Marcellin, Brie, Camembert, Coulommiers, Chaource… And soft cheeses with a washed rind like Livarot, Maroilles, Pont-l’Évêque, Munster, Époisses, etc. Or try some uncooked pressed cheeses such as Saint-Nectaire and Reblochon.

Alongside kiwi, mango, pomelo, lemon, orange, avocado, and pineapple, you’ll find blueberries, papaya, and passion fruit in April. In May, strawberries make their appearance, as well as rhubarb, peaches, plums, nectarines, and tomatoes. Then in June, enjoy cherries, apricots, watermelon, melon, figs, and redcurrants.
