Ingredients
4 beef tournedos
150 g butter
2 egg yolks
2 tbsp tarragon vinegar
2 tbsp chopped tarragon
Salt and pepper
1 tbsp five peppercorn blend
1 tsp whole cumin seeds
1 tsp whole coriander seeds
1 tsp dried oregano
1 tbsp olive oil
Preparation:
1. Marinate the meat in the fridge: drizzle the tournedos with olive oil and roll them in the crushed spices (five peppercorn blend, cumin, coriander, and oregano). Take the meat out 15 minutes before cooking.
2. Using your Kokko steel, cook the meat to your liking.
3. Prepare a béarnaise sauce by heating the vinegar with the shallot and tarragon. Then add the two egg yolks off the heat. Return to the heat to thicken the sauce, then add the cold butter off the heat.
4. Serve and enjoy this delicious dish.
