Ingredients:
700 g squid
2 lemons
1 shallot, finely sliced
4 tbsp olive oil
2 tbsp chopped parsley
2 tsp Espelette pepper

Preparation:
1. Wash and cut the squid tentacles. Score them with a knife to enhance cooking, then set aside in a mixing bowl.
2. In a bowl, prepare a marinade by mixing: lemon juice, olive oil, sliced shallot, Espelette pepper, and chopped parsley. Add the squid to the marinade, mix well, then cover the bowl with plastic wrap. Let marinate for 3 hours, stirring the ingredients every hour.
3. Preheat your Kokko over high heat. Place the squid and marinade directly onto the plate. Cook for 10 minutes, turning regularly to grill evenly on all sides.
4. Ready to enjoy!
