Asparagus with orange vinaigrette

Asperges et vinaigrette à l'orange


Cooking time: 20 min – Preparation time: 15 min – Serves: 6

Ingredients

2 bunches of asparagus (500 g each)
2 tbsp olive oil
1 tsp oregano
Salt and pepper


For the vinaigrette:

1 orange
3 tbsp olive oil
2 tbsp soy sauce
2 tbsp caster sugar


Preparation:

1. Blanch the finely sliced orange zest in boiling water for one minute. Drain, then candy the zest in a saucepan with the sugar and 150 ml water for 10 minutes. Drain again and let cool.

2. Snap off the ends of the asparagus and place them in a dish with the olive oil and oregano. Season with salt and pepper, then toss to coat.

3. Grill the asparagus on your Kokko, turning frequently for about ten minutes.

4. Prepare a vinaigrette with the olive oil, candied zest, soy sauce, and the juice of half an orange.

5. Drizzle the vinaigrette over the asparagus and serve!
