Ingredients:
200 g sardines
600 g potatoes
200 g carrots
260 g zucchini
200 g green beans
20 ml oil
200 g tomatoes
60 ml mayonnaise
½ lemon, juiced
Salt, pepper
Equipment:
Kokko Kamado Little, L or XL
Large round Chamba black clay dish
Chamba black clay salad bowl
Smoke generator tube for hot smoking
Wooden smoking boards for hot smoking
Fine stainless steel tongs
Preparation:
1. Prepare your sardines by removing the bones, place them in a dish with salt and pepper, then refrigerate for 1 hour.
2. Meanwhile, cut the vegetables into sticks and dice the tomatoes.
3. Steam all the vegetables for 15 minutes, then let them rest for a few minutes.
4. In a salad bowl, make the sauce with the lemon juice, oil, and mayonnaise. Don’t forget to season with salt and pepper.
5. Add the vegetables to the bowl.
6. Take the sardines out of the refrigerator, place them in your Kokko, and smoke for 5 to 10 minutes.
7. Once done, let the sardines air for a few minutes.
8. Then add the sardines to the salad bowl with the vegetables and chill before serving!
