Ingredients
4 chicken legs
1 tablespoon chili sauce
1 tablespoon ketchup
1 teaspoon allspice
1/2 teaspoon cinnamon
1 crushed garlic clove
2 tablespoons brown sugar
1 tablespoon olive oil
1 tablespoon rum
Salt and pepper
For the mango salsa:
1 mango, peeled and diced
1 red onion, chopped
1/2 red bell pepper, diced
2 spring onions, chopped
1 teaspoon fresh thyme
1 tablespoon olive oil
Preparation:
For the chicken: Place all the marinade ingredients in a shallow dish and mix. Use half of this marinade to coat the chicken legs and refrigerate for at least one hour.
Fire up your Kokko and sear both sides of the chicken, then lower the heat to finish cooking (about 30 minutes). Baste the chicken regularly with the remaining marinade.
For the mango salsa, combine all the ingredients in a dish. Chill for one hour. Plate with lime wedges and the mango salsa. Enjoy!
