
Preparation time: 15 minutes + 4 hours – Cooking time: 30 min – Serves: 6
Ingredients:
One salmon, 1.8 kg (300 g per person)
300 g coarse salt
150 g caster sugar
3 pinches of pepper
Honey
Preparation:
1. First, remove all the bones from the back of the salmon.
2. Cut it into 6 portions.
3. In a dish, mix the salt, sugar, and pepper.
4. Place the salmon in the dish and cover it completely, above and below, with this mixture.
5. Then, refrigerate the salmon portions for 4 to 6 hours to allow the flavors to infuse.
6. Take them out and rub them with a cloth or rinse with water, then dry with a towel.
7. Finally, place the salmon in your Kokko and smoke for 15 to 45 minutes, depending on the desired intensity of smoking.
Once done, it’s ready to enjoy!
Optional: During cooking, you can brush the salmon with honey.
