Ingredients:
8 medium sweet potatoes
Fleur de sel
Hazelnut oil
1 jar of garlic-flavored cancoillotte
1 bunch of chives
ACCESSORIES:
Kamado Kokko Little, L or XL
Aluminum foil
Cast iron cooking grate
or Stainless steel cooking grate

Preparation:
1. Light your Kokko and bring the temperature to 200°C. On a sheet of aluminum foil, add a pinch of fleur de sel, a drizzle of hazelnut oil, and a sweet potato, then wrap it up. Repeat for each potato.
2. Place the sweet potatoes wrapped in aluminum on the cooking grate and cook for 40 minutes. Once done, remove them from the heat and let them rest for 10 minutes.
3. Open the foil packet, keeping the aluminum around the potato, scoop out the sweet potatoes and add a generous spoonful of cancoillotte, place the potatoes back on the grill for 2 minutes with the lid closed, then serve immediately with finely chopped chives.
