Veal osseline

Osseline de veau


Cooking time: 15 min - Prep time: 30 min - Serves: 2

Ingredients:

2 veal osselines, 180g each
100g fresh organic green beans
2 slices of smoked bacon
3 organic heirloom tomatoes (zebra)


Equipment:

Kamado Kokko Little, L or XL
Cast iron cooking grate
Half ceramic stone
for indirect cooking of the tomatoes
Stainless steel tongs
for turning your green bean bundles without damaging them
Chamba black clay plate
for plating


Preparation:

1. Remember to take your veal osselines out 30 minutes before cooking.

2. Cook your green beans in well-salted water for 10 minutes to keep their vibrant color. Then wrap your beans into bundles with a slice of smoked bacon.

3. Cook your veal osselines and bean bundles on your Kokko, 2 minutes per side, then set them aside on a plate.

4. Cut the tomatoes in half and quickly sear them on one side on a hot Kokko.

5. Plate your bundles of green beans, tomatoes, and veal osselines.
